Shouldn't erally be a difference, since they would both work in dual channel mode. As long as they're in pairs, it's good. But 2x1Gb is better becuase if you want to add more later, you can just add some, and don't have to take out some first.

The only reason why 2x 1GB will always be better is that it leaves room for more upgrades in the future.

Always less sticks = better performance when comparing the same amount of memory but there are exceptions.

4 x 512 MB tends to run at lower speeds on older(or just crappier) MOBOs. (333 MHz vs 400 MHz). So most people tend to just go with 2x 1GB instead.
