What is it you have to "undelete"? Can't you do the restore from your backups?

Otherwise, the first thing to do is shut the server down, as otherwise deleted data will get overwritten with new data.

Any tool you run to recover the data must be started from another OS. You can't do it from the running server. That means you will probably have to add an additional HD to the server and install an OS, like Windows 7 to that disk along with the drivers for your RAID controller, so the disks of your array are available. After that install getdataback to that 2nd OS and scan your servers RAID arrays with it. If the data you want to recover is seen, register the utility and then you can copy it to another location, like a USB disk or a somewhere else on your LAN:

I will second on Recuva. It does not need to be installed, and can be run from a USB.

But as rindi mentioned, what will work depends on how your disks are setup.
If you can get something to run under the current OS, without installing anything, you should be good.
